1/4-1/2 cup good quality goat cheese, crumbled
1 small bunch of fresh basil, finely chopped
olive oil for drizzling
3 large purple beets, chopped into 1 inch pieces
3 cloves of garlic, minced
1/4 cup toasted walnuts
1/4 cup grated parmesan cheese
2 TBS fresh lemon juice
1/4 cup extra virgin olive oil
pinch of salt and pepper
