Caramel Apple Steamed Pudding with Vanilla Sauce

Ingredients:

3 large apples, 1 1/2 cored and thinly sliced, the other 1/2 cored and grated
1 tablespoon unsalted butter

For the Caramel:

1/4 cup water
1 teaspoon lemon juice
3/4 cup granulated sugar

For the Pudding:

1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine sea salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 cup crystalized ginger, finely chopped
2/3 cup granulated sugar
1/4 cup unsulphured molasses
2 eggs
1/2 cup buttermilk

Vanilla Sauce:

1 cup buttermilk
4 egg yolks
1/3 cup granulated sugar
1/8 teaspoon fine sea salt
1 teaspoon vanilla extract
2-4 teaspoons Marsala, optional
