12 oz boneless skinless chicken breast – grilled (I used tenders)
1 teaspoon olive oil
1 green bell pepper – sliced
8oz mushrooms – sliced
1 large onion – cut in half and sliced
1 clove garlic – minced
1 teaspoon oregano
salt and pepper – to taste
1 tablespoon dijon mustard
1/2 cup reduced fat mozzarella cheese
