1 diced onion
1 lemongrass stem, white part only, finely sliced
1 long red chilli, finely diced
1 tbsp ginger, peeled and julienned
1 kaffir lime leaf, julienned
1 bunch of coriander (cilantro), stems and roots finely chopped, leaves reserved
3 garlic cloves, finely chopped 1kg pumpkin, peeled and cut into cubes
270 ml of coconut cream
270 ml of coconut milk
500 ml of vegetable stock
zest of 1 orange
